Replace homemade Tomato Sauce with (dare we say it) a jar of marinara from the grocery store? You must be kidding. The flavor profile of this sauce is worlds away from anything you may have sampled in Italy. Ciao, pasta. Hello, Vegetarian Grape Leaves and Sheikh-el-Mahshi.


TOMATO SAUCE

Ingredients

  • 2 TBL olive oil
  • 1 cup yellow onion, minced (about 1 large onion)
  • 4 tsp salt
  • 1 ½ tsp Syrian Spice
  • ½ tsp ground black pepper
  • ½ TBL minced garlic
  • 1 28-oz can whole peeled tomatoes
  • 2 cups (or one 15.5-oz can) of 6-in-1 brand tomatoes
  • 1 15-oz can tomato sauce
  • 1 cup fresh plum tomatoes, small dice with juices 

Directions

Pour can of whole peeled tomatoes into a mixing bowl and crush by hand. Set aside.

Combine olive oil, minced onion, salt, Syrian Spice, and pepper in a 4-quart saucepan. Cook over high heat until onions are completely translucent. Add minced garlic and continue to cook for 2-3 minutes. Add crushed whole peeled tomatoes, 6&1 brand tomatoes, tomato sauce, and fresh diced tomatoes (with their juices) to the pan. Continue cooking over high heat until sauce comes to a light boil, then reduce to a low heat. Cover and simmer for an additional 45 minutes-1 hour, stirring occasionally until flavors are melded.
