TOMATO AND CUCUMBER SALAD
Ingredients
- 2 cups Roma tomatoes, diced
- 1 ½ cups cucumber, peeled and diced
- 1/3 cup parsley, finely chopped
- 1/3 cup fresh squeezed lemon juice
- ½ cup olive oil
- ½ tsp garlic powder
- salt and pepper to taste
Directions
Combine tomato, cucumber, and parsley in a bowl, then toss with lemon juice, olive oil, and garlic powder. Add salt and pepper to taste.
